Quick Chicken Fajitas

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 3 large chicken breasts (thawed & sliced into strips)
  • 1 (16 ounce) frozen onion and three pepper blend (red, yellow, green)
  • 1 (4 ounce) can sliced mushrooms (drained)
  • 1/3 cup medium hot salsa
  • 2 tablespoons lime juice (concentrated)
  • 1 teaspoon instant minced garlic
  • 2 tablespoons canola oil
  • 2 tablespoons butter
  • 1/2 teaspoon cumin (ground)
  • 10 medium flour or 10 medium corn tortillas
  • monterey jack and cheddar cheese blend
  • 1 teaspoon sour cream

Recipe

  • 1 in a large skillet heat oil & butter together, add chicken, sautee until chickens color changes, add cumin and lime juice, stir until chicken is coated, add pepper & onion blend and garlic, sautee until vegetables are tender, add salsa, stir all ingredients together, simmer for 10 minutes allowing liquid to reduce, add mushrooms, spoon onto tortillas, add cheese and sour cream. enjoy!
  • 2 serve with spanish rice, black beans, and guacamole'!
  • 3 may also be used over corn chips as chicken fajita nachos!
