Peanut Butter Carrot Bread

Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon allspice
- 1 cup firmly packed brown sugar
- 1 cup chunky peanut butter
- 1/4 cup vegetable oil or 1/4 cup canola oil
- 1 teaspoon vanilla
- 2 eggs
- 2 cups finely shredded carrots
- 1/2 cup milk
- 1/2 cup raisins or 1/2 cup sultana
Recipe
- 1 sift together the flour, baking powder, baking soda, salt and allspice.
- 2 in a separate bowl, mix together the brown sugar, peanut butter, oil, vanilla, and eggs.
- 3 mix in the carrots.
- 4 stir the first mixture into the second mixture, alternately adding milk.
- 5 pour into a greased 9x5x3" loaf pan.
- 6 bake at 350 degrees f for 1 hour.
