Peanut Butter Carrot Bread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon allspice
  • 1 cup firmly packed brown sugar
  • 1 cup chunky peanut butter
  • 1/4 cup vegetable oil or 1/4 cup canola oil
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups finely shredded carrots
  • 1/2 cup milk
  • 1/2 cup raisins or 1/2 cup sultana

Recipe

  • 1 sift together the flour, baking powder, baking soda, salt and allspice.
  • 2 in a separate bowl, mix together the brown sugar, peanut butter, oil, vanilla, and eggs.
  • 3 mix in the carrots.
  • 4 stir the first mixture into the second mixture, alternately adding milk.
  • 5 pour into a greased 9x5x3" loaf pan.
  • 6 bake at 350 degrees f for 1 hour.
