Z's Hearty Onion Soup

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 tablespoon canola oil
  • 6 onions, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 2 tablespoons whole wheat flour
  • 6 cups beef broth
  • 1/2 cup red wine
  • 4 tablespoons cognac
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • 4 slices whole wheat toast
  • 1 cup freshly shredded parmesan cheese

Recipe

  • 1 saute onions in oil with garlic and salt til onions are golden, 5 minute.
  • 2 reduce heat and continue cooking til onions are soft, 20 minutes.
  • 3 add flour to onions, stir 1 minute.
  • 4 add broth, wine, cognac, bay leaf and pepper.
  • 5 bring to a boil.
  • 6 reduce heat and simmer 30 minute uncovered.
  • 7 remove bay leaf.
  • 8 preheat oven to 400.
  • 9 put soup in 4 oven proof ramekins.
  • 10 top with toast and cheese.
  • 11 bake until cheese is bubbly, 15 minutes.
