Z's Hearty Onion Soup

Ingredients
- Servings: 4
- 1 tablespoon canola oil
- 6 onions, thinly sliced
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 2 tablespoons whole wheat flour
- 6 cups beef broth
- 1/2 cup red wine
- 4 tablespoons cognac
- 1 bay leaf
- 1/2 teaspoon black pepper
- 4 slices whole wheat toast
- 1 cup freshly shredded parmesan cheese
Recipe
- 1 saute onions in oil with garlic and salt til onions are golden, 5 minute.
- 2 reduce heat and continue cooking til onions are soft, 20 minutes.
- 3 add flour to onions, stir 1 minute.
- 4 add broth, wine, cognac, bay leaf and pepper.
- 5 bring to a boil.
- 6 reduce heat and simmer 30 minute uncovered.
- 7 remove bay leaf.
- 8 preheat oven to 400.
- 9 put soup in 4 oven proof ramekins.
- 10 top with toast and cheese.
- 11 bake until cheese is bubbly, 15 minutes.
