Whole Wheat Pumpkin Nut Bread

Total Time: 1 hr 20 mins Preparation Time: 15 mins Cook Time: 1 hr 5 mins

Ingredients

  • 1 cup whole wheat flour
  • 1 cup sugar
  • 2/3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1 cup canned pumpkin
  • 1/2 cup egg substitute
  • 1/3 cup water
  • 1/4 cup canola oil
  • 1/2 cup chopped walnuts

Recipe

  • 1 in a bowl, combine the first eight ingredients.
  • 2 in another bowl, combine the pumpkin, egg substitute, water and oil; mix well.
  • 3 stir into dry ingredients just until moistened.
  • 4 fold in walnuts.
  • 5 spoon into a 9-in. x 5-in. x 3-in. baking pan coated with nonstick cooking spray.
  • 6 bake at 350° for 60-65 minutes or until a toothpick inserted near the center comes out clean.
  • 7 cool for 15 minutes before removing from pan to a wire rack.
