Pistachio 5-spice Cookies

Ingredients
- 3/4 cup pistachio nut, shelled and skinned
- 1/4 cup water
- 3 tablespoons canola oil
- 2/3 cup brown rice syrup or 2/3 cup honey
- 1 cup brown rice flour
- 1 cup amaranth flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon chinese five spice powder
Recipe
- 1 preheat oven to 350 degrees.
- 2 in a blender, grind nuts to a powder and put in a small bowl.
- 3 add water, oil, and syrup.
- 4 mix well.
- 5 in a large bowl, whisk together flour, baking powder, baking soda and five-spice powder.
- 6 stir in nut mixture to form a dough.
- 7 form 1ö balls and bake on ungreased cookie sheets for 8-10 minutes, or until lightly browned.
- 8 makes about 3 dozen cookies.
- 9 *note:this recipe is gluten and dairy free.
