Stuffed Mushrooms

Ingredients

  • 12 large mushrooms, stems removed and chopped (keep mushroom caps)
  • 1/4 cup crisco vegetable oil or 1/4 cup canola oil, divided
  • 1/2 cup green onion, chopped (approx. 6)
  • 2 garlic cloves, chopped
  • 3/4 cup breadcrumbs, preferably panko
  • 1/2 cup parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 preheat oven to 350 degrees f line a baking sheet with parchment paper.
  • 2 heat 3 tablespoons oil in a large skillet on medium heat. cook chopped mushroom stems, green onions, and garlic for 5 minutes or until tender. cool 10 minutes.
  • 3 in a separate bowl, combine cooled mixture with remaining ingredients.
  • 4 place mushroom caps on prepared baking sheet. btush with remaining 1 tablespoons oil and fill with cooled mixture.
  • 5 bake in preheated oven for 20 minutes.
  • 6 tip: mushrooms can be assembled earlier in the day and refrigerated until ready to bake.
