Pepper Jack Stuffed Chicken

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 4 ounces monterey jack pepper cheese
  • 4 boneless skinless, chicken breast halves
  • 2 teaspoons taco seasoning
  • 2 tablespoons canola oil

Recipe

  • 1 cut cheese into two 2 1/4 in 1 inch x 3/4 inch strips.
  • 2 flatten chicken to 1/4 inch thickness.
  • 3 place a strip of cheese down the center of each chicken breast half.
  • 4 fold chicken over cheese and secure with toothpicks.
  • 5 rub seasoning over chicken.
  • 6 in a large skillet, brown chicken in oil on all sides.
  • 7 transfer to a 8 inch square baking dish, and bake uncovered at 350 degrees for 25-30 minutes or until the meat is no longer pink.
  • 8 discard toothpicks.
