Susan's All Grain Muffins

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 2 large mashed bananas
  • 2 large eggs
  • 1/3 cup canola oil
  • 1 cup low-fat buttermilk
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups millers unprocessed natural bran
  • 1 1/2 cups organic whole wheat flour
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon vanilla
  • 3/4 cup raisins
  • 1/2 cup honey
  • 3 tablespoons whole flax seeds

Recipe

  • 1 preheat oven 400 degrees.
  • 2 mash the bananas.
  • 3 add all the wet ingredients to the bananas and mix thoroughly.
  • 4 add the dry ingredients, except the raisins, to the wet ingredients and mix with electric mixer 2-3 minutes.
  • 5 add the raisins last and mix thoroughly.
  • 6 spray muffin tins with a grease release (pam) and fill to the top of muffin tin.
  • 7 tap muffin tins on counter a couple of times to settle any bubbles in mixture.
  • 8 bake. enjoy.
