Rajama Palak Dal Curry Aka Kidney Bean, Spinach, Lentil Cuury

Ingredients

- 2 tablespoons canola oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 green chili pepper, minced, i remove the seeds
- 1/4 teaspoon turmeric
- 1/4 teaspoon cumin, ground
- 1/4 teaspoon coriander, ground
- 1/2 teaspoon salt
- 1/4 teaspoon garam masala
- 1 teaspoon ginger paste
- 1 (14 ounce) can red kidney beans, drained and rinsed
- 1 (14 ounce) can lentils, drained and rinsed
- 10 ounces frozen chopped spinach, thawed, drained and squeezed dry
- 6 ounces tomato paste
Recipe
- 1 heat oil in skillet and add onion and garlic.
- 2 cook until transparent about 5 minutes.
- 3 add chopped chili.
- 4 stir in cumin, coriander, tumeric, salt and garam marsala.
- 5 cook for about 2 minutes.
- 6 add ginger paste and tomato paste.
- 7 add the kidney beans and lentils and spinach.
- 8 cook for 2 minutes.
- 9 pour in 3/4 cup water.
- 10 cover pan and cover for 5 minutes over low heat,.
