Light Spicy Cornbread Muffins

Ingredients
- 1 1/2 cups yellow cornmeal
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 2 egg whites
- 1/4 cup picante sauce
- 3 tablespoons canola oil
- 1 (8 ounce) carton plain nonfat yogurt
- cooking spray
Recipe
- 1 combine first 4 ingredients in a large bowl; make a well in center of mixture.
- 2 combine egg whites and next 3 ingredients; add to dry ingredients, stirring just until moistened.
- 3 spoon batter into muffin pans coated with cooking spray, filling two-thirds full. bake at 425 for 18 to 20 minutes. remove from pans immediately.
