Light Spicy Cornbread Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups yellow cornmeal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 2 egg whites
  • 1/4 cup picante sauce
  • 3 tablespoons canola oil
  • 1 (8 ounce) carton plain nonfat yogurt
  • cooking spray

Recipe

  • 1 combine first 4 ingredients in a large bowl; make a well in center of mixture.
  • 2 combine egg whites and next 3 ingredients; add to dry ingredients, stirring just until moistened.
  • 3 spoon batter into muffin pans coated with cooking spray, filling two-thirds full. bake at 425 for 18 to 20 minutes. remove from pans immediately.
