Spinach-pineapple Salad

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 4
  • 6 ounces baby spinach leaves
  • 1/2 orange, peeled and sliced
  • 16 black olives
  • 1/2 cup pineapple chunk
  • 1/4 cup pineapple juice
  • 1/2 teaspoon chili powder
  • 2 tablespoons canola oil mayonnaise

Recipe

  • 1 toss together salad ingredients in a large bowl.
  • 2 whisk dressing ingredients in a small cruet.
  • 3 chill both, separately, for 30 minutes.
  • 4 to serve, pour dressing over salad, toss together.
