Mini Frittatas

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1/4 lb italian turkey sausage link, casings removed
  • 1 1/2 cups frozen hash brown potatoes, thawed
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon canola oil
  • 1/3 cup water
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 eggs
  • 2 egg whites
  • 1 cup 1% fat buttermilk
  • 2 tablespoons all-purpose flour
  • 1/4 cup shredded parmesan cheese
  • 3/4 cup salsa

Recipe

  • 1 in a nonstick skillet, cook sausage over medium heat until no longer pink.
  • 2 removed with a slotted spoon to paper towels.

  • 10 bake at 350 degrees for 20-25 minutes or until a knife comes out clean.
  • 11 carefully run a knife around the edge of cups to loosen frittatas.
  • 12 serve with salsa.
