Sopa Seca De Tortilla

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 10 6-inch corn tortillas
  • cooking oil (olive or canola)
  • 2 green bell peppers, cut in strips
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1 cup whipping cream
  • 1 cup shredded monterey jack cheese

Recipe

  • 1 cut tortillas in strips about 3 inches long and 1/2 inch wide.
  • 2 in medium skillet heat 1/4 inch of oil.
  • 3 fry tortilla strips, a few at a time, about 10 seconds or just until limp.
  • 4 remove with slotted spoon.
  • 5 drain on paper toweling.
  • 6 pour off all but about 2 tablespoons oil from skillet.
  • 7 add green pepper strips, onion and garlic; cook till onion is tender.
  • 8 sprinkle vegetables with salt.
  • 9 in 1-1/2 quart casserole, combine tortilla strips, vegetables, and half of the cheese.
  • 10 pour whipping cream over all.
  • 11 cover and bake in 350-degree oven for 20 minutes.
  • 12 uncover.
  • 13 stir gently; sprinkle with remaining cheese.
  • 14 bake uncovered about 10 minutes more or until heated through.
