Sizzling Shrimp With Corn Relish

Ingredients
- 1 lime
- 1 tablespoon canola oil
- 1/2 cup shallot, chopped
- 1 tablespoon garlic, minced
- 1 tablespoon jalapeno, minced
- 1 1/2 lbs shrimp, peeled deveined
- 1 1/2 cups corn kernels, frozen
- 1/4 cup cilantro, dried
Recipe
- 1 heat a 14 inch wok over high heat.
- 2 add oil to wok, swirling to coat.
- 3 add shallots, garlic and jalapeno to wok; stir-fry 30 seconds or just until shallots begin to brown.
- 4 add shrimp to wok; stir fry 3 minutes or until shrimp are done.
- 5 add corn; stir fry until corn is heated.
- 6 stir in juice from lime and cilantro.
- 7 yield: 4 servings.
- 8 serving size 1 cup.
