The Dietitian Who Loves Chocolate Chip Cookies

Ingredients
- 1/2 cup butter
- 1/2 cup canola margarine
- 2/3 cup sugar
- 2/3 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/3 cups whole wheat flour
- 1 cup almond meal
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups whole oats
- 1 cup walnuts
- 1 1/2 cups dark chocolate chips
Recipe
- 1 in a mixer, beat together the butter, earth balance, and sugars.
- 2 add two eggs and vanilla and beat until smooth and creamy.
- 3 in a separate bowl, mix together the flour, almond meal, baking soda and salt. slowly add to the butter mixture until combined.
- 4 stir in the oats, walnuts, and chocolate chips until just combined-- do not overmix.
- 5 spoon onto cookie sheet 2" apart. bake at 350 for 12-18 minutes depending on desired crispyness.
- 6 **rather than baking all the cookies at once, i recommend rolling the dough up into a "log shape" using seran wrap and freezing it. not only does that allow you to bake a few any time you want fresh, hot cookies, but it also lets you cut the log into discs for thin crispy cookies (i cut them about 1/4" thick).
