The Dietitian Who Loves Chocolate Chip Cookies

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1/2 cup butter
  • 1/2 cup canola margarine
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/3 cups whole wheat flour
  • 1 cup almond meal
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups whole oats
  • 1 cup walnuts
  • 1 1/2 cups dark chocolate chips

Recipe

  • 1 in a mixer, beat together the butter, earth balance, and sugars.
  • 2 add two eggs and vanilla and beat until smooth and creamy.
  • 3 in a separate bowl, mix together the flour, almond meal, baking soda and salt. slowly add to the butter mixture until combined.
  • 4 stir in the oats, walnuts, and chocolate chips until just combined-- do not overmix.
  • 5 spoon onto cookie sheet 2" apart. bake at 350 for 12-18 minutes depending on desired crispyness.
  • 6 **rather than baking all the cookies at once, i recommend rolling the dough up into a "log shape" using seran wrap and freezing it. not only does that allow you to bake a few any time you want fresh, hot cookies, but it also lets you cut the log into discs for thin crispy cookies (i cut them about 1/4" thick).
