Skips Green Chili Stew

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 tablespoons canola oil
  • 2 garlic cloves, minced
  • 1 large onion, quartered
  • 1 1/2 lbs cubed lamb (1/2 to 1-inch cubes)
  • 3 cups chicken broth
  • 2 cups water
  • 1 teaspoon fresh ground pepper
  • 1/4 teaspoon crushed dried oregano, to taste
  • 1/2 teaspoon ground cumin, to taste
  • 1 teaspoon kosher salt
  • 2 (4 ounce) cans green chilies
  • 1 (15 ounce) can diced tomatoes (do not drain)
  • 4 large potatoes, 1-inch cubed (steamed or boiled)

Recipe

  • 1 sauté garlic and onions in oil till tender.
  • 2 add broth, water and lamb bring to a low boil for 15 minute.
  • 3 skim of any fat or scum that forms.
  • 4 boil or steam potatoes in a separate pot or steamer, 15 minutes.

  • 6 cover and reduce to a simmer, for 10 to 15 minutes, or till potatoes are tender.
