Yummy Applesauce Bran Muffins

Ingredients
- 1 1/2 cups all-bran cereal
- 1 cup oat bran
- 3/4 cup wheat bran
- 1/2 cup old fashioned oats (not instant)
- 2 1/2 cups boiling water
- 2 cups whole wheat flour
- 1/2 splenda sugar substitute
- 2 tablespoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 2 cups fat-free buttermilk
- 3/4 cup unsweetened applesauce
- 1/2 cup egg substitute
- 1/8 cup canola oil (can use 1/4 c canola and no flax oil)
- 1/8 cup canola oil
- flax seed (i use these generously in mine)
- raisins
- mashed banana
Recipe
- 1 combine bran cereal, oat bran, wheat bran and oats in a large bowl. pour in boiling water and stir until moistened.
- 2 set aside for 15 minutes.
- 3 combine whole wheat flour, sugar substitute, baking sida, cinnamon, and salt in a bowl.
- 4 mash out lumps in bran mixture. stir in buttermilk applesauce, egg substitute and oil until smooth.
- 5 stir in flour mixture and stir until smooth. batter will be thick and using an electric mixture makes it easier.
- 6 the batter can keep in your refrigerator for up to 3 weeks so you can bake muffins as you need them or bake them all at once. the muffins freeze well too.
- 7 pour into paper lined muffin pan.
- 8 bake until puffed and golden brown, about 25-30 minutes. cool muffins 3 minutes.
