Yummy Applesauce Bran Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1 1/2 cups all-bran cereal
  • 1 cup oat bran
  • 3/4 cup wheat bran
  • 1/2 cup old fashioned oats (not instant)
  • 2 1/2 cups boiling water
  • 2 cups whole wheat flour
  • 1/2 splenda sugar substitute
  • 2 tablespoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 cups fat-free buttermilk
  • 3/4 cup unsweetened applesauce
  • 1/2 cup egg substitute
  • 1/8 cup canola oil (can use 1/4 c canola and no flax oil)
  • 1/8 cup canola oil
  • flax seed (i use these generously in mine)
  • raisins
  • mashed banana

Recipe

  • 1 combine bran cereal, oat bran, wheat bran and oats in a large bowl. pour in boiling water and stir until moistened.
  • 2 set aside for 15 minutes.
  • 3 combine whole wheat flour, sugar substitute, baking sida, cinnamon, and salt in a bowl.
  • 4 mash out lumps in bran mixture. stir in buttermilk applesauce, egg substitute and oil until smooth.
  • 5 stir in flour mixture and stir until smooth. batter will be thick and using an electric mixture makes it easier.
  • 6 the batter can keep in your refrigerator for up to 3 weeks so you can bake muffins as you need them or bake them all at once. the muffins freeze well too.
  • 7 pour into paper lined muffin pan.
  • 8 bake until puffed and golden brown, about 25-30 minutes. cool muffins 3 minutes.
