Spicy Beef Quesadillas

Total Time: 1 hr Preparation Time: 45 mins Cook Time: 15 mins

Ingredients

  • 1 lb lean ground beef, shopping list
  • 1 tablespoon chipotle pepper, finely ground
  • 48 inches soft tortillas
  • 1 (6 1/2 ounce) package alouette spreadable cheese with garlic and herbs
  • 1 cup scallion, washed and chopped
  • 1 cup cilantro, roughly chopped
  • 1 cup red bell pepper, cut into 1/4 inch strips
  • salt and pepper
  • nonstick cooking spray, and canola or other cooking oil

Recipe

  • 1 pre-heat oven to 325°f.
  • 2 in large sauté pan on medium heat, add just enough canola oil to cover pan.
  • 3 add ground beef, chipotle pepper and salt and pepper to taste.
  • 4 lightly brown meat, stirring occasionally.
  • 5 remove from pan, drain on paper towels and refrigerate for 30 minutes.
  • 6 lay out 4 tortillas on a cooking sheet and evenly cover with the spreadable cheese.
  • 7 evenly distribute beef, scallions, cilantro, and bell pepper over cheese.
  • 8 cover each layered tortilla with another tortilla and lightly mist with cooking spray.
  • 9 bake about 15 minutes.
  • 10 remove from oven, place the 4 quesadillas on a cutting board and cut into quarters; serve hot.
