Spicy Beef Quesadillas

Ingredients
- 1 lb lean ground beef, shopping list
- 1 tablespoon chipotle pepper, finely ground
- 48 inches soft tortillas
- 1 (6 1/2 ounce) package alouette spreadable cheese with garlic and herbs
- 1 cup scallion, washed and chopped
- 1 cup cilantro, roughly chopped
- 1 cup red bell pepper, cut into 1/4 inch strips
- salt and pepper
- nonstick cooking spray, and canola or other cooking oil
Recipe
- 1 pre-heat oven to 325°f.
- 2 in large sauté pan on medium heat, add just enough canola oil to cover pan.
- 3 add ground beef, chipotle pepper and salt and pepper to taste.
- 4 lightly brown meat, stirring occasionally.
- 5 remove from pan, drain on paper towels and refrigerate for 30 minutes.
- 6 lay out 4 tortillas on a cooking sheet and evenly cover with the spreadable cheese.
- 7 evenly distribute beef, scallions, cilantro, and bell pepper over cheese.
- 8 cover each layered tortilla with another tortilla and lightly mist with cooking spray.
- 9 bake about 15 minutes.
- 10 remove from oven, place the 4 quesadillas on a cutting board and cut into quarters; serve hot.
