Ingredients
- Servings: 20
- 2 cups self raising flour
- 1 teaspoon baking powder
- 2 tablespoons caster sugar
- 1 1/2 cups milk
- 2 eggs
- 2 teaspoons vanilla essence
- 300 g frozen blueberries
- canola cooking spray
Recipe
- 1 sift flour & baking powder into a bowl.
- 2 stir in sugar and make a well in the centre.
- 3 in another bowl whisk milk, eggs and vanilla.
- 4 add to the dry ingredients.
- 5 whisk until just combined - don’t overbeat or will be tough.
- 6 stir in the blueberries.
- 7 spray a non-stick pan with oil and place over medium heat.
- 8 put ¼ cup batter into the pan & cook until bubbles appear on surface
- 9 turn over and cook until lightly golden.
- 10 serve with a dollop of yogurt mixture.
- 11 200g tub natural set yoghurt.
- 12 2 tbs honey.
- 13 ½ tsp ground cinnamon.
- 14 place yoghurt, honey and cinnamon in a bowl and stir.
- 15 until combined.
