Yumbo Baby Kay Hotty Hotcakes!!

Ingredients

  • Servings: 20
  • 2 cups self raising flour
  • 1 teaspoon baking powder
  • 2 tablespoons caster sugar
  • 1 1/2 cups milk
  • 2 eggs
  • 2 teaspoons vanilla essence
  • 300 g frozen blueberries
  • canola cooking spray

Recipe

  • 1 sift flour & baking powder into a bowl.
  • 2 stir in sugar and make a well in the centre.
  • 3 in another bowl whisk milk, eggs and vanilla.
  • 4 add to the dry ingredients.
  • 5 whisk until just combined - don’t overbeat or will be tough.
  • 6 stir in the blueberries.
  • 7 spray a non-stick pan with oil and place over medium heat.
  • 8 put ¼ cup batter into the pan & cook until bubbles appear on surface
  • 9 turn over and cook until lightly golden.
  • 10 serve with a dollop of yogurt mixture.
  • 11 200g tub natural set yoghurt.
  • 12 2 tbs honey.
  • 13 ½ tsp ground cinnamon.
  • 14 place yoghurt, honey and cinnamon in a bowl and stir.
  • 15 until combined.
