Low Fat Cheese And Asparagus Soufflé

Ingredients

  • 2 1/2 lbs fresh asparagus, trimmed and cut into 1 inch pieces
  • 2 eggs, beaten
  • 1 cup lowfat swiss cheese, grated
  • 2 teaspoons canola oil
  • 4 tablespoons parmesan cheese
  • 1 tablespoon cornstarch or 1 tablespoon arrowroot
  • 1/4 cup low-sodium low-fat chicken broth
  • 2 egg whites, beaten until stiff
