fifteen minute chicken chili

Ingredients

  • Servings: 4
  • 1 tablespoon canola oil or extra virgin olive oil
  • 10 ounces boneless, skinless chicken breast, cut in bite-sized pieces
  • 1 1/2 tablespoons chili powder
  • 1 1/2 tablespoons cumin
  • 2 (14.5 ounce) cans no-salt-added diced tomatoes
  • 1 (15 ounce) can no-salt-added black or red beans
  • 1 (4.5 ounce) can minced green chilies
  • 1 cup yellow whole-kernel corn, frozen or canned
  • salt and cayenne pepper, to taste

  • in a medium saucepan, saute chicken in oil over medium high heat for 3 minutes or until white. stir in chili powder and cumin to coat chicken. saute 3-4 minutes. add remaining ingredients; heat through.

Ingredients

  • 6 skinless, boneless chicken breast halves
  • 6 slices swiss cheese
  • 6 slices ham
  • 3 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 6 tablespoons butter
  • 1/2 cup dry white
  • 1 teaspoon chicken bouillon granules
  • 1 tablespoon cornstarch
  • 1 cup heavy whipping cream

  • pound chicken breasts if they are too thick. place a cheese and ham slice on each breast within 1/2 inch of the edges. fold the edges of the chicken over the filling, and secure with toothpicks. mix the flour and paprika in a small bowl, and coat the chicken pieces.
  • heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. add the and bouillon. reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
  • remove the toothpicks, and transfer the breasts to a warm platter. blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. cook, stirring until thickened, and pour over the chicken. serve warm.

Peanut Butter Kiss Cookies

Ingredients

  • Servings: 18
  • 1 cup white sugar
  • 1 cup peanut butter
  • 1 egg
  • 18 milk chocolate candy kisses, unwrapped

Recipe

  • preheat oven to 350 degrees f.
  • combine sugar, peanut butter, and egg.
  • shape into 1 inch balls and place on ungreased cookie sheet. note: if dough is too sticky, refrigerate 1/2 hour or until easy to handle.
  • bake for 10 minutes. remove cookies from oven. press a chocolate kiss into the center of each warm cookie.

Roast Sticky Chicken-rotisserie Style

Ingredients

  • Servings: 2
  • 4 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 onions, quartered
  • 2 (4 pound) whole chickens

    Preparation Time: 10 mins Cook Time: 5 hrs

    Ready Time: 9 hrs 10 mins

  • in a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. remove and discard giblets from chicken. rinse chicken cavity, and pat dry with paper towel. rub each chicken inside and out with spice mixture. place 1 onion into the cavity of each chicken. place chickens in a resealable bag or double wrap with plastic wrap. refrigerate overnight, or at least 4 to 6 hours.
  • preheat oven to 250 degrees f (120 degrees c).
  • place chickens in a roasting pan. bake uncovered for 5 hours, to a minimum internal temperature of 180 degrees f (85 degrees c). let the chickens stand for 10 minutes before carving.

fruit 'n' honey granola

Ingredients

  • Servings: 18
  • 4 cups quick cooking oats
  • 1 cup chopped toasted almonds
  • 1/4 cup toasted wheat germ
  • 1/4 cup sunflower seeds
  • 1/4 cup ground flax seeds
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup canola oil
  • 2/3 cup honey
  • 1/2 cup raisins
  • 1/2 cup chopped dried pineapple
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup chopped dried papaya

  • preheat oven to 300 degrees f (150 degrees c). line a large baking sheet with parchment paper.
  • in a large bowl, mix the oats, almonds, wheat germ, sunflower seeds, flax seeds, cinnamon, nutmeg, canola oil, and honey. spread evenly over the prepared baking sheet, pressing down lightly with the back of a spoon.
  • bake 20 minutes in the preheated oven, or until lightly browned. allow to cool completely.
  • in a large bowl, break the cooled granola into large chunks. mix in the raisins, pineapple, sweetened dried cranberries, and papaya. store in an airtight container.

kohlrabi bread

  • 1 1/4 cups peeled and diced kohlrabi
  • 3/4 cup fat-free milk
  • 2 tablespoons canola oil
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons salt
  • 2 teaspoons dried rosemary
  • 2 teaspoons instant yeast (such as saf-instant)

  • bring a pot of water to a boil. cook kohlrabi at a boil until completely tender, 5 to 7 minutes; drain.
  • transfer drained kohlrabi to a blender; puree until smooth.
  • place milk, kohlrabi puree, oil, bread flour, whole wheat flour, brown sugar, salt, rosemary, and yeast into bread machine pan, in order listed.
  • set machine for medium crust on the basic cycle and press start.

Low Carb Pancake Crepes

  • 3 ounces cream cheese, softened
  • 2 eggs, beaten
  • 1 teaspoon ground cinnamon
  • 1 tablespoon sugar-free syrup
  • 1 teaspoon butter

  • in a bowl, mash the cream cheese with beaten eggs, about 1 teaspoon at a time at first, until the mixture is smooth and free of lumps. beat in the cinnamon and sugar-free syrup.
  • melt the butter in a nonstick skillet over medium heat. when the butter has stopped foaming, reduce heat to medium-low, and pour in several tablespoons of the batter. swirl to coat the bottom of the skillet. allow to cook until set, about 4 minutes on the first side; flip the crepe with a spatula and cook the other side until the crepe shows small browned spots, 1 to 2 more minutes.
