perfect fried green tomatoes

Ingredients

  • Servings: 5
  • 4 green tomatoes, cut into 1/4-inch slices
  • salt and ground black pepper to taste
  • 1 cup all-purpose flour
  • 2 teaspoons salt, divided
  • 2 teaspoons ground black pepper, divided
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 2 cups canola oil, or as needed
  • ranch sauce:
  • 1/2 cup ranch dressing
  • 2 tablespoons seasoning
  • 2 teaspoons hot pepper sauce

  • season tomato slices with salt and pepper.
  • combine flour, 1 teaspoon salt, and 1 teaspoon pepper in a shallow bowl. pour buttermilk in a second shallow bowl. mix cornmeal, parsley, paprika, 1 teaspoon salt, 1 teaspoon pepper, and cayenne pepper in a third shallow bowl.
  • dredge each tomato slice in the flour mixture to coat, dip into the buttermilk, and finish by pressing each side of the tomato into the cornmeal mixture to coat. lay coated tomato slices a baking sheet; rest to let tomatoes absorb flavor of coating, 10 to 15 minutes.
  • heat oil in a deep-fryer or large saucepan to 350 degrees f (175 degrees c).
  • gently drop tomato slices into the hot oil and cook until golden brown and floating, 2 to 3 minutes. drain on a plate lined with paper towel.
  • whisk ranch dressing, seasoning, and hot pepper sauce together in a small bowl; serve with the fried tomato slices.

Eggless Peanut Butter Cookies

  • 1 cup shortening
  • 1 cup creamy peanut butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1/2 cup buttermilk
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Recipe

  • preheat oven to 375 degrees f (190 degrees c). lightly grease cookie sheets.
  • mix the shortening, peanut butter, white sugar, brown sugar and buttermilk until smooth and fully combined.
  • add the flour, baking powder, baking soda and salt to the peanut butter mixture and mix until well blended.
  • drop cookies 2 inches apart on lightly greased cookie sheet. flatten with a fork that has been dipped in flour. bake at 375 degrees f (190 degrees c) for 10 to 12 minutes.

  • 1 cup milk
  • 1/3 cup butter
  • 1 (.25 ounce) package active dry yeast
  • 1/2 cup white sugar
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 3 eggs
  • filling:
  • 3/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup raisins
  • glaze:
  • 1 teaspoon light corn syrup
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups sifted confectioners' sugar
  • 2 tablespoons half-and-half cream

  • heat the milk in a small saucepan until it , then remove from heat. add the butter and stir until melted; let cool until lukewarm.
  • in a large mixing bowl, dissolve the yeast in the milk mixture. add the sugar, 3 cups of flour, salt and eggs; stir well to combine. add the remaining flour, 1/2 cup at a time, stirring well after each addition. when the dough has pulled together, turn it out a lightly floured surface and knead until smooth and supple, about 8 minutes.
  • lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • deflate the dough and turn it out a lightly floured surface and roll into a 10x 14 inch rectangle. lightly brush the far edge with water. in a small bowl combine the cinnamon and 3/4 cup brown sugar and sprinkle over the rectangles. then sprinkle the raisins and chopped nuts over the dough. roll up the dough into a log and seal the seam.
  • cut the dough into 12 equal pieces; place the pieces in a greased 9x13 inch baking pan, or 12 inch deep dish pizza pan. cover with plastic wrap and place in the refrigerator to rise overnight.
  • the next morning, preheat oven to 375 degrees f (190 degrees c). take the rolls out of the refrigerator and let stand at room temperature for 30 minutes.
  • bake the rolls for 25 to 30 minutes or until golden. meanwhile, combine the corn syrup with the vanilla in a small bowl. whisk in the powdered sugar and enough cream to make a thick glaze; set aside. drizzle the glaze over the rolls and serve warm.

  • 1 cup confectioners' sugar
  • 2 teaspoons milk
  • 2 teaspoons light corn syrup
  • 1/4 teaspoon almond extract
  • assorted food coloring

  • in a small bowl, stir together confectioners' sugar and milk until smooth. beat in corn syrup and almond extract until icing is smooth and glossy. if icing is too thick, add more corn syrup.
  • divide into separate bowls, and add food colorings to each to desired intensity. dip cookies, or paint them with a brush.

Maple Salmon

  • Servings: 4
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon ground black pepper
  • 1 pound salmon

  • in a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
  • place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
  • preheat oven to 400 degrees f (200 degrees c).
  • place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

German Baby

Ingredients

  • 3 eggs
  • 3/4 cup milk
  • 3/4 cup all-purpose flour
  • 1/4 cup butter
  • 2 tablespoons confectioners' sugar

Recipe

  • preheat oven to 425 degrees f (220 degrees c). place butter in a 10 inch cast iron skillet and heat the skillet in oven.
  • beat eggs at high speed with an electric mixer. slowly add the milk and flour.
  • pour batter into hot skillet. return skillet to oven and bake for 20 minutes. it will rise like a souffle, then fall when taken out of oven. lightly dust with powdered sugar and serve.

Soft Peanut Butter Cookies

Ingredients

  • Servings: 2
  • 1/2 cup margarine, softened
  • 1/2 cup peanut butter
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups all-purpose flour

Recipe

  • combine margarine, peanut butter, sugars, egg, and vanilla. blend together very well.
  • add flour, baking soda and salt with mixer. chill dough 15 minutes in the refrigerator. roll into balls by hand.
  • place on sprayed cookie sheet and bake in a preheated 350 degrees f (175 degrees c) oven until edges very lightly browning (about 7 to 10 minutes). don't overcook. we store them in a plastic storage containers, and they stay soft!
