  • 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
  • 1 cup prepared basil pesto
  • 4 thick slices mozzarella cheese

  • preheat the oven to 350 degrees f (175 degrees c). spray a baking dish with cooking spray.

  • waxed paper
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • sea salt to taste

  • 2 pounds green tomatoes, sliced
  • 1 cup canola oil for frying, or as needed

  • line a baking sheet with waxed paper.
  • beat eggs and water in a shallow bowl. place flour and cornmeal in 2 separate shallow bowls. season cornmeal with salt and pepper.
  • dip each tomato slice into flour, then dip into egg mixture. press tomato into cornmeal mixture, shaking off excess. transfer tomato to prepared baking sheet. repeat with remaining tomato slices, arranging tomatoes in a single layer.

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter
  • 1/4 cup boiling water
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • 1 tablespoon lemon juice
  • 4 cups fresh blackberries, rinsed and drained

  • preheat oven to 400 degrees f (200 degrees c). line a baking sheet with aluminum foil.
  • in a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. cut in butter until the mixture resembles coarse crumbs. stir in 1/4 cup boiling water just until mixture is evenly moist.
  • in a separate bowl, dissolve the cornstarch in cold water. mix in remaining 1 cup sugar, lemon juice, and blackberries. transfer to a cast iron skillet, and bring to a boil, stirring frequently. drop dough into the skillet by spoonfuls. place skillet on the foil lined baking sheet.
  • bake 25 minutes in the preheated oven, until dough is golden brown.

braised balsamic chicken

Ingredients

  • Servings: 6
  • 6 skinless, boneless chicken breast halves
  • 1 teaspoon garlic salt
  • ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 cup balsamic vinegar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme

    Preparation Time: 10 mins Cook Time: 25 mins Ready Time: 35 mins

  • season both sides of chicken breasts with garlic salt and pepper.
  • heat olive oil in a skillet over medium heat; cook seasoned chicken breasts until chicken is browned, 3 to 4 minutes per side. add onion; cook and stir until onion is browned, 3 to 4 minutes.
  • pour diced tomatoes and balsamic vinegar over chicken; season with basil, oregano, rosemary and thyme. simmer until chicken is no longer pink and the juices run clear, about 15 minutes. an instant-read thermometer inserted into the center should read at least 165 degrees f (74 degrees c).

molasses sugar cookies

Ingredients

  • Servings: 6
  • 1 1/2 cups shortening
  • 2 cups white sugar
  • 1/2 cup molasses
  • 2 eggs
  • 4 cups all-purpose flour
  • 4 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 1 teaspoon salt

Recipe

    Preparation Time: 25 mins Cook Time: 15 mins Ready Time: 3 hrs 40 mins

  • melt the shortening in a large pan on the stove, and cool.
  • add sugar, eggs, and molasses, beat well.
  • in a separate bowl, sift dry ingredients together and add to the pan. mix well and chill 3 hours or overnight.
  • form into walnut-size balls. roll in granulated sugar. place on greased cookie sheet about 2 inches apart.
  • bake at 375 degrees f (190 degrees c) for 8-10 minutes.
  • store in an airtight container to keep from getting overly crisp. if they do lose their softness, an easy way to restore it is to place one slice of fresh bread in the container with the cookies for a couple of hours or overnight and they will be soft again!
