oatmeal raisin cookies iv

Ingredients

  • Servings: 6
  • 3 eggs, beaten
  • 1 cup raisins
  • 1 teaspoon vanilla extract
  • 1 cup butter
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking soda
  • 2 cups rolled oats
  • 1 cup chopped pecans

Recipe

  • combine eggs, vanilla and raisins in a small bowl; cover and let stand for 1 hour.
  • preheat oven to 350 degrees f (175 degrees c).
  • in a large bowl, cream the butter, brown sugar, and white sugar together. sift together the flour, cinnamon, and baking soda; stir into the creamed mixture. then stir in the raisin mixture, rolled oats, and nuts.
  • drop by teaspoonfuls an unprepared cookie sheet. bake for 10 minutes, or until lightly browned.
