Gazpacho! Deliciously Different!

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • Servings: 8
  • 4 -5 slices french bread, 1/2 inch thick, crust removed
  • 2 cups water
  • 1 sweet onion, chopped
  • 2 medium cucumbers, peeled, seeded and chopped
  • 1/2 cup champagne vinegar
  • 1/2 cup canola oil
  • 3 tablespoons sugar
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 lb green grape, halved
  • 1/2 cup sliced almonds, toasted

Recipe

  • 1 cut bread into small cubes to make 2 cups.
  • 2 place all except almonds and grapes in food processor or blender.
  • 3 blend until perfectly smooth.
  • 4 chill soup several hours or over night.
  • 5 serve in cold bowls, cups or glasses.
  • 6 garnished with grapes and almonds.
