Moist Cornbread With Cheese

Ingredients

- 4 tablespoons bacon grease or 4 tablespoons canola oil
- 1 1/3 cups cornmeal
- 2/3 cup bread flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/3 cup light brown sugar
- 2 large eggs
- 1 cup nonfat milk
- 2/3 cup plain yogurt
- 1 cup sharp cheddar cheese, grated
- 1/2 cup monterey jack pepper cheese, grated
Recipe
- 1 preheat the oven to 425 degrees.
- 2 place the bacon grease in a 10" cast iron skillet.
- 3 when the oven temp reaches 425 insert the skillet and allow the bacon grease to melt, about 10 minutes.
- 4 meanwhile, mix all 6 dry ingredients together in a large bowl.
- 5 mix the eggs, milk, and yogurt in another bowl and whisk until smooth.
- 6 combine both wet and dry ingredients together and stir well but don't overmix.
- 7 add cheese and stir until combined.
- 8 remove hot skillet from oven, pour in the cornbread mixture and put back in the oven to bake for 15-20 minutes.
- 9 let rest 10 minutes and serve.
