Moist Cornbread With Cheese

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 4 tablespoons bacon grease or 4 tablespoons canola oil
  • 1 1/3 cups cornmeal
  • 2/3 cup bread flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/3 cup light brown sugar
  • 2 large eggs
  • 1 cup nonfat milk
  • 2/3 cup plain yogurt
  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup monterey jack pepper cheese, grated

Recipe

  • 1 preheat the oven to 425 degrees.
  • 2 place the bacon grease in a 10" cast iron skillet.
  • 3 when the oven temp reaches 425 insert the skillet and allow the bacon grease to melt, about 10 minutes.
  • 4 meanwhile, mix all 6 dry ingredients together in a large bowl.
  • 5 mix the eggs, milk, and yogurt in another bowl and whisk until smooth.
  • 6 combine both wet and dry ingredients together and stir well but don't overmix.
  • 7 add cheese and stir until combined.
  • 8 remove hot skillet from oven, pour in the cornbread mixture and put back in the oven to bake for 15-20 minutes.
  • 9 let rest 10 minutes and serve.
