Pita Bread Salad

Ingredients

- 6 pita bread
- 1 small red onion, chopped
- 1 head romaine lettuce, cut into 2-inch pieces
- 1 cucumber, peeled and diced
- 2 cups cherry tomatoes or 2 cups grape tomatoes, halved
- 1/2 cup olive
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onion, chopped
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup crisco vegetable oil or 1/2 cup canola oil
Recipe
- 1 preheat oven to 400°f cut pita into 2-inch pieces. spread on baking sheet. bake in preheated oven for 10-12 minutes or until lightly toasted. reserve. this can be done 1 week ahead of time and stored in an airtight container.
- 2 combine remaining salad ingredients in a large bowl.
- 3 dressing:
- 4 combine first 5 ingredients in a small bowl. toss with dressing. dressing can be refrigerated for up to 5 days.
