Pita Bread Salad

Ingredients

  • Servings: 8
  • 6 pita bread
  • 1 small red onion, chopped
  • 1 head romaine lettuce, cut into 2-inch pieces
  • 1 cucumber, peeled and diced
  • 2 cups cherry tomatoes or 2 cups grape tomatoes, halved
  • 1/2 cup olive
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onion, chopped
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup crisco vegetable oil or 1/2 cup canola oil

Recipe

  • 1 preheat oven to 400°f cut pita into 2-inch pieces. spread on baking sheet. bake in preheated oven for 10-12 minutes or until lightly toasted. reserve. this can be done 1 week ahead of time and stored in an airtight container.
  • 2 combine remaining salad ingredients in a large bowl.
  • 3 dressing:
  • 4 combine first 5 ingredients in a small bowl. toss with dressing. dressing can be refrigerated for up to 5 days.
