"bourbon" Chicken

Ingredients

- 1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized chunks
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 tablespoons canola oil
- 2 garlic cloves, minced
- 1/3 cup orange juice concentrate
- 1/2 cup water
- 1/4 cup soy sauce
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon minced ginger
- 1/2 teaspoon crushed red pepper flakes
- 1/4 cup brown sugar, loosely packed
- 1 tablespoon ketchup
Recipe
- 1 mix cornstarch and salt. toss chicken in cornstarch/salt mixture until lightly coated.
- 2 heat oil in large skillet. add garlic and saute.
- 3 add chicken chunks and cook quickly until chicken browns.
- 4 remove chicken and set aside. allow pan to cool slightly.
- 5 after the skillet has slightly cooled, add the rest of the ingredients and stir until the brown sugar has dissolved. bring to a boil.
- 6 add chicken back in, reduce heat to low, and simmer until chicken is cooked through and the sauce has thickened, about 15 minutes.
- 7 serve over rice.
