"bourbon" Chicken

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized chunks
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 tablespoons canola oil
  • 2 garlic cloves, minced
  • 1/3 cup orange juice concentrate
  • 1/2 cup water
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon minced ginger
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup brown sugar, loosely packed
  • 1 tablespoon ketchup

Recipe

  • 1 mix cornstarch and salt. toss chicken in cornstarch/salt mixture until lightly coated.
  • 2 heat oil in large skillet. add garlic and saute.
  • 3 add chicken chunks and cook quickly until chicken browns.
  • 4 remove chicken and set aside. allow pan to cool slightly.
  • 5 after the skillet has slightly cooled, add the rest of the ingredients and stir until the brown sugar has dissolved. bring to a boil.
  • 6 add chicken back in, reduce heat to low, and simmer until chicken is cooked through and the sauce has thickened, about 15 minutes.
  • 7 serve over rice.
