Tender Roasted Potatoes

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 10
  • 3 lbs small red potatoes, quartered
  • 2 tablespoons canola oil
  • 1/3 cup prepared horseradish
  • 1/4 cup whole grain mustard
  • 2 tablespoons butter, melted

Recipe

  • 1 in a large bowl, toss potatoes with oil. place potatoes on greased baking sheet, in single layer.
  • 2 bake at 400 degrees for 30 minutes.
  • 3 meanwhile in a small bowl combine the horseradish, mustard and butter.
  • 4 spoon over potatoes and toss to coat.
  • 5 bake 5 - 7 minutes longer or until tender.
