Tender Roasted Potatoes

Ingredients

- 3 lbs small red potatoes, quartered
- 2 tablespoons canola oil
- 1/3 cup prepared horseradish
- 1/4 cup whole grain mustard
- 2 tablespoons butter, melted
Recipe
- 1 in a large bowl, toss potatoes with oil. place potatoes on greased baking sheet, in single layer.
- 2 bake at 400 degrees for 30 minutes.
- 3 meanwhile in a small bowl combine the horseradish, mustard and butter.
- 4 spoon over potatoes and toss to coat.
- 5 bake 5 - 7 minutes longer or until tender.
