Strawberry Rhubarb Baked Oatmeal

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2 cups rhubarb, diced
  • 3 cups strawberries, diced
  • 2 large eggs
  • 1/4 cup applesauce
  • 1/4 cup canola oil or 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 1 1/2 cups milk
  • 3 cups quick-cooking oats
  • 1/2 cup wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4-1/2 cup brown sugar, for sprinkling

Recipe

  • 1 preheat the oven to 350°f. spray a 9x13-inch baking dish.
  • 2 toss the rhubarb and strawberries in the baking dish.
  • 3 in a mixing bowl, whisk together the remaining ingredients, except the brown sugar. pour the batter over top of the fruit and stir gently to combine the fruit.
  • 4 sprinkle the brown sugar over the top.
  • 5 bake in the preheated oven for 25 to 30 minutes, or until toothpick comes out clean in the middle.
  • 6 serve strawberry rhubarb baked oatmeal with milk, cream, yogurt (or even with ice cream as a dessert!).
