Orange -almond Cake

Ingredients

- 1 1/4 cups all-purpose flour (or 1 1/2 cups cake flour)
- 1 cup sugar or 1 cup splenda sugar substitute
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup 1% low-fat milk
- 1/3 cup canola oil
- 1/4 cup egg substitute
- 2 teaspoons orange rind, grated
- 1/4 cup sliced almonds
- 1 tablespoon sugar or 1 tablespoon splenda sugar substitute
- 2 tablespoons orange-flavored liqueur
Recipe
- 1 heat oven to 35o.
- 2 grease and flour square cake pan (8x8x2).
- 3 beat all ingredients until smooth, except almonds, 1 tablespoon sugar and the liquer.
- 4 pour into pan.
- 5 sprinkle with almonds.
- 6 bake 40-45 minutes, or until wooden pick inserted in center comes out clean.
- 7 sprinkle with tablespoon sugar.
- 8 poke holes randomly around top of cake and drizzle with liquer.
- 9 cook 10 to 15 minutes.
- 10 remove from pan and cool completly before cutting.
