Blueberry-citrus Mini Loaves

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg
  • 3/4 cup orange juice
  • 1/4 cup canola oil
  • 1 tablespoon orange peel, grated
  • 1/2 cup blueberries
  • 1/4 cup pecans, chopped

Recipe

  • 1 in a large bowl, combine flour, sugar, salt and baking soda.
  • 2 in a small bowl, whisk the egg, orange juice, oil and orange peel. stir into dry ingredients just until moistened. fold in blueberries and pecans.
  • 3 transfer to two 5 3/4 inches x 3 inches x 2 inches loaf pans coated with cooking spray. bake at 350 degrees for 40-45 minutes or until a toothpick inserted near the center comes out clean. cool for 10 minutes before removing from pans to wire racks.
  • 4 if using frozen blueberries, use without thawing to avoid discoloring the batter.
