Whole Wheat Dinner Muffins

Ingredients

  • Servings: 10
  • 2 cups whole wheat flour
  • 1 cup oat bran
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups low-fat buttermilk
  • 1 tablespoon canola oil

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 spray 10 muffin tins with non-stick cooking spray.
  • 3 in a large bowl, mix the flour, bran, baking soda, baking powder and salt.
  • 4 make a well in the middle of flour mixture and pour in the buttermilk and oil.
  • 5 mix quickly with a rubber scraper until flour disappears, folding dough with a kneading motion.
  • 6 shape the dough into a round ball.
  • 7 using 2 tablespoons of dough for each muffin, shape into a ball and place in prepared tin.
  • 8 repeat until all dough is used.
  • 9 bake for 18 minutes.
