Southern Buttermilk Cornbread

- 1 1/2 cups yellow cornmeal
- 1/2 cup all-purpose flour
- 1 1/2 cups fat-free buttermilk
- 2 tablespoons canola oil
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup egg substitute
Recipe
- 1 heat oven to 450 degrees.
- 2 grease a 10-inch cast iron skillet.
- 3 mix all ingredients. beat vigorously 30 seconds.
- 4 pour batter into pan.
- 5 bake about 20 minutes, until golden brown.
- 6 serve warm.
