Potato Pancakes

- 5 lbs russet potatoes, peeled
- 1 medium onion
- 3 eggs
- 2 1/2 cups pancake mix
- 1 tablespoon garlic, minced
- 2 teaspoons salt
- 1 teaspoon pepper
- canola oil
Recipe
- 1 using a food processor, grate potatoes and onion. do not drain water.
- 2 in a bowl, beat eggs.
- 3 stir in potato and onion.
- 4 add pancake mix, minced garlic, salt and pepper.
- 5 stir until well blended.
- 6 heat 1 tablespoon oil in large frying pan.
- 7 spoon 3 tablespoon sized portions of potato mixture into hot frying pan.
- 8 fry 3 to 4 minutes on each side.
