Orzo Salad With Shrimp And Double Peppers

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 3
  • 1 cup orzo pasta
  • 1 1/2 lbs cooked shrimp
  • 1 sweet red pepper, julienned
  • 1 cup snow pea pods, blanched
  • 1 bunch green onion, 1/4 ed lenghtwise and into 2 inch lengths
  • 1/4 cup rice vinegar
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon dried red pepper flakes
  • 1/2 cup canola oil
  • 2 -3 tablespoons sesame oil
  • sesame seeds (optional)
  • 1 tablespoon soy sauce

Recipe

  • 1 prepare orzo according to pkg directions.
  • 2 drain.
  • 3 if using large shrimp (recommended), slice them in half lengthwise so there are 2 equal halves.
  • 4 combine all salad ingredients.
  • 5 combine dressing ingredients, whisking thoroughly.
  • 6 adjust to your taste and combine with salad ingredients.
  • 7 chill several hours, stirring occasionally.
