Kevin's Mom's Pancakes

Ingredients
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup sour milk
- 1 egg, lightly beaten
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
Recipe
- 1 in bowl, whisk together all dry ingredients.
- 2 in separate bowl, stir together all wet ingredients.
- 3 make a well in centre of dry ingredients.
- 4 dump wet ingredients into the well and stir together until just combined.
- 5 a few small lumps in the batter are okay.
- 6 heat a nonstick pan over low-medium heat.
- 7 pour batter in 1/4 cup measures.
- 8 fry about 2 1/2 minutes, until edges are dry and bubbles are just starting to form.
- 9 flip and fry other side about 2 minutes.
