Orange -almond Cake

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 9
  • 1 1/4 cups all-purpose flour (or 1 1/2 cups cake flour)
  • 1 cup sugar or 1 cup splenda sugar substitute
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup 1% low-fat milk
  • 1/3 cup canola oil
  • 1/4 cup egg substitute
  • 2 teaspoons orange rind, grated
  • 1/4 cup sliced almonds
  • 1 tablespoon sugar or 1 tablespoon splenda sugar substitute
  • 2 tablespoons orange-flavored liqueur

Recipe

  • 1 heat oven to 35o.
  • 2 grease and flour square cake pan (8x8x2).
  • 3 beat all ingredients until smooth, except almonds, 1 tablespoon sugar and the liquer.
  • 4 pour into pan.
  • 5 sprinkle with almonds.
  • 6 bake 40-45 minutes, or until wooden pick inserted in center comes out clean.
  • 7 sprinkle with tablespoon sugar.
  • 8 poke holes randomly around top of cake and drizzle with liquer.
  • 9 cook 10 to 15 minutes.
  • 10 remove from pan and cool completly before cutting.
