Thai Coconut Curry Shrimp

Ingredients
- 1 teaspoon canola oil
- 1/2 cup onion, chopped
- 1/2 teaspoon red curry paste
- 1 teaspoon sugar
- 12 ounces shrimp
- 1/3 cup light coconut milk
- 2 teaspoons fish sauce
- 1/4 cup green onion
- 1 tablespoon basil, chopped
Recipe
- 1 heat oil and saute onions over medium high heat.
- 2 add curry paste and saute 1 minute.
- 3 stir in sugar, saute 15 seconds.
- 4 add shrimp, saute 3 minutes (or until done).
- 5 stir in coconut milk and fish sauce and heat through.
- 6 remove from heat and stir in green onions and basil.
