Thai Coconut Curry Shrimp

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 teaspoon canola oil
  • 1/2 cup onion, chopped
  • 1/2 teaspoon red curry paste
  • 1 teaspoon sugar
  • 12 ounces shrimp
  • 1/3 cup light coconut milk
  • 2 teaspoons fish sauce
  • 1/4 cup green onion
  • 1 tablespoon basil, chopped

Recipe

  • 1 heat oil and saute onions over medium high heat.
  • 2 add curry paste and saute 1 minute.
  • 3 stir in sugar, saute 15 seconds.
  • 4 add shrimp, saute 3 minutes (or until done).
  • 5 stir in coconut milk and fish sauce and heat through.
  • 6 remove from heat and stir in green onions and basil.
