Sunday Apple Fritters

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • canola oil
  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large apples, unpeeled and finely chopped (about 3 cups)
  • 2/3 cup milk
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • powdered sugar

Recipe

  • 1 pour oil to the depth of 2 inches in a dutch oven; heat to 350°.
  • 2 in a bowl, combine flour and next 3 ingredients.
  • 3 stir in chopped apple, tossing gently to coat.
  • 4 make a well in the center of mixture.
  • 5 in another bowl, whisk together the milk, vanilla, and eggs until blended.
  • 6 add to flour mixture, stirring just until dry ingredients are moistened.
  • 7 drop batter by heaping tbsp into hot oil.
  • 8 fry fritters in batches, 1-2 minutes on each side or until golden.
  • 9 drain on paper towels.
  • 10 sprinkle fritters with powdered sugar.
