Sunday Apple Fritters

Ingredients
- canola oil
- 2 cups all-purpose flour
- 2/3 cup sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 large apples, unpeeled and finely chopped (about 3 cups)
- 2/3 cup milk
- 2 teaspoons vanilla extract
- 2 large eggs
- powdered sugar
Recipe
- 1 pour oil to the depth of 2 inches in a dutch oven; heat to 350°.
- 2 in a bowl, combine flour and next 3 ingredients.
- 3 stir in chopped apple, tossing gently to coat.
- 4 make a well in the center of mixture.
- 5 in another bowl, whisk together the milk, vanilla, and eggs until blended.
- 6 add to flour mixture, stirring just until dry ingredients are moistened.
- 7 drop batter by heaping tbsp into hot oil.
- 8 fry fritters in batches, 1-2 minutes on each side or until golden.
- 9 drain on paper towels.
- 10 sprinkle fritters with powdered sugar.
