Fijian Honey Cake

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup honey
  • 1 egg
  • 1 tablespoon canola oil
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice (or ground cloves)
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons sliced almonds

Recipe

  • 1 preheat the oven to 350°f.
  • 2 coat a 9" x 5" loaf pan with nonstick cooking spray.
  • 3 in a large bowl, combine all the ingredients except the almonds and beat until well blended.
  • 4 pour the batter into the loaf pan and sprinkle with the almonds.
  • 5 bake for 45 to 55 minutes or until a wooden toothpick inserted in the center comes out clean.
  • 6 allow to cool for 10 minutes then remove from pan to wire rack to cool completely.
