Whole Wheat Oatmeal Millet Muffins

Ingredients
- 2/3 cup boiling water
- 1/2 cup uncooked oats
- 1/4 cup canola oil
- 1/4 cup honey
- 1/4 cup brown sugar
- 1 teaspoon vanilla
- 1 egg
- 7/8 cup whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup hulled millet seed
Recipe
- 1 preheat the oven to 350°f.
- 2 pour boiling water over the oats, cover, and let stand 20 minutes; cool.
- 3 sift together the flour, baking powder and baking soda.
- 4 in a separate bowl, combine oil, honey and brown sugar. add the vanilla and the egg and beat until well blended.
- 5 add the cooled oatmeal to the wet ingredients and stir well to blend.
- 6 add wet to dry ingredients and stir.
- 7 stir in the millet.
- 8 spoon the batter into the muffin cups, filling about 2/3 full.
- 9 bake for 15-20 minutes.
