Whole-grain Energy Bars

Ingredients

- 1/2 cup whole wheat flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar
- 1/3 cup honey
- 2 egg whites
- 1 large whole egg
- 2 tablespoons canola oil
- 2 teaspoons vanilla extract
- 2 cups rolled oats
- 1 cup dried cranberries
- 1/2 cup walnuts
- 1/2 cup butterscotch chips
Recipe
- 1 preheat oven to 350. coat a 9-by-13 inch baking with cooking spray.
- 2 whisk flour, cinnamon, baking soda, and salt in a medium bowl. beat peanut butter, sugar and honey in a large mixing bowl with an electric mixer until well blended. blend eggs and egg whites in a small bowl, add to peanut butter misture, along with oil and vanilla, beat until smooth. add flour mixture and mix with a rubber spatula. mix in oats, dried cranberries, walnuts and butterscotch chips. scrape into baking dish.
- 3 bake until lightly brown 20-25 minutes. let cool in pan and cut into bars.
