Whole-grain Energy Bars

Ingredients

  • Servings: 24
  • 1/2 cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 1/3 cup honey
  • 2 egg whites
  • 1 large whole egg
  • 2 tablespoons canola oil
  • 2 teaspoons vanilla extract
  • 2 cups rolled oats
  • 1 cup dried cranberries
  • 1/2 cup walnuts
  • 1/2 cup butterscotch chips

Recipe

  • 1 preheat oven to 350. coat a 9-by-13 inch baking with cooking spray.
  • 2 whisk flour, cinnamon, baking soda, and salt in a medium bowl. beat peanut butter, sugar and honey in a large mixing bowl with an electric mixer until well blended. blend eggs and egg whites in a small bowl, add to peanut butter misture, along with oil and vanilla, beat until smooth. add flour mixture and mix with a rubber spatula. mix in oats, dried cranberries, walnuts and butterscotch chips. scrape into baking dish.
  • 3 bake until lightly brown 20-25 minutes. let cool in pan and cut into bars.
