Orzo Salad With Shrimp And Double Peppers

Ingredients
- Servings: 3
- 1 cup orzo pasta
- 1 1/2 lbs cooked shrimp
- 1 sweet red pepper, julienned
- 1 cup snow pea pods, blanched
- 1 bunch green onion, 1/4 ed lenghtwise and into 2 inch lengths
- 1/4 cup rice vinegar
- 1 tablespoon dijon mustard
- 1/2 teaspoon dried red pepper flakes
- 1/2 cup canola oil
- 2 -3 tablespoons sesame oil
- sesame seeds (optional)
- 1 tablespoon soy sauce
Recipe
- 1 prepare orzo according to pkg directions.
- 2 drain.
- 3 if using large shrimp (recommended), slice them in half lengthwise so there are 2 equal halves.
- 4 combine all salad ingredients.
- 5 combine dressing ingredients, whisking thoroughly.
- 6 adjust to your taste and combine with salad ingredients.
- 7 chill several hours, stirring occasionally.
